Homemade Flour Tortillas & BLT’s

I should probably preface this post with the myriad of reasons why I’m qualified to teach you how to make Homemade Tortillas and subsequently, BLT’s:

1. I like tortillas.

2. My parents live in Mexico eight months out of the year.

3. Farmboy knows how to grill bacon really well.

4. It’s a long, time honored, traditional recipe, passed down through generation upon generation of my family.

5. Number four is not even remotely true. I found it on the Google when I realized we didn’t have any tortillas for dinner.

6. I got frugal hippie style…and homemade tortillas are super cheap.

7. Five people ate them and no one died.

Now that your confidence level in my frugal Master Chef ability is right where it belongs, let’s get started.

You’ll need:

2 1/2 cups flour

1 tsp baking powder

1/2 tsp salt

1/4 c lard, butter, or oil (I used olive oil)

7/8 cup hot tap water

A pan, preferably cast iron, but work with what ya got.

First, mix up the flour, baking powder and salt.

Me, looking fab in the kitchen as always.

Next, add in the oil and water.

Mix and mix and knead and mix. If it’s really crumbly, add a tiny bit more water.

Now, make eight little dough balls.

Lightly (very lightly or you’ll smoke out the house) grease your pan and put it on the stove on medium heat (I turn it down a bit after the 3rd or 4th one).

Roll out a dough ball. Some people use a tortilla press to make lovely pieces of round perfection. Me? I have a thing against new fandangled kitchen gadgets that only do one thing, so I just smash the crap outta the dough with a rolling pin. The result is kinda ugly…but I’m calling it Freeform which gives me some serious foodie street cred.

Side note:  If you’d like to make pretty tortillas (& you thought I was snobby cuz I wanted foodie street cred), flip a bowl upside down on top of the tortilla & trim off the excess. Lift your bowl and walah! Perfect circle.

Put your tortilla in the pan. When it starts to bubble up a bit (about 30 seconds), flip it.

Then give it about thirty seconds on that side and you got yourself a tortilla! Tadaa!

Finished tortillas
This is two tortillas. Not eight.

Do that eight more times and you have eight tortillas! Taaadaaaaaa!

Now, sit there and look cute while your hottiepants farm boy grills some bacon.

Next add lettuce, tomatoes, cheese and some horseradish mustard and Voila!
